The ultimate in foie gras perfection! Hudson Valley's corn fed Moulard ducks produce large, silky foie gras. Hudson Valley Foie Gras raises their ducks cage free and individually hand-feed the ducks with special care. Weight of product will not be less than 1.5 lbs and may be up to 15% larger.
Ideal for roasting, braising, searing or preparing terrines or torchons. Poach it whole and serve sliced with braised fennel and cracked black pepper caramel sauce. Devein, wrap in cheese cloth and cure in lavender sea salt for 48 hours. Slice in 1 inch slices and sear in a hot pan 30 - 45 seconds per side.
